Cupcake Fondue?

Cupcake Fondue? Love this idea.  Sounds very romantic and simply delicious. da Dad and I received a fondue pot as a wedding gift years ago and did Fondue date nights before we had our daughter. Somehow, it's been tucked away in our cupboard, collecting dust along with other kitchen gadgets I seldom use anymore. I think it's time to pull this little pot down, dust it off and try this deliciously fun dessert this weekend. Afterall, I do love to bake so this will give me a chance to try a new cake recipe, too!

You will need:
  • 3 cups powdered sugar
  • 1/3 cup liquid (orange juice, milk, or water)
  • 2 tablespoons light corn syrup
  • Miniature-size cupcakes in the flavor of your choice, cooled and unfrosted
  • Assorted sprinkles, chopped nuts, and other toppings
1. Make a batch of your favorite mini cupcakes.  Use your favorite recipe or box mix - pound cake or dense cakes work best. Make them small as you will be eating several of them and don't want to pack in those calories. Let them cool completely, then remove the paper liners if used. Allow to cool completely, place in plastic bag until ready to Fondue!
2. Make the fondue: Whisk together powdered sugar, orange juice (or milk or water), and corn syrup.  NOTE:  If you use milk or water, you can add any flavoring of your choice:  vanilla, almond, lemon...  If you use the OJ, you are stuck with orange flavored icing.  You may need to add a drop more liquid or a dash more powdered sugar until you get have a smooth, thick glaze. If you want a colored frosting, you can use any of your favorite icing colors.
3. Pour icing into the fondue pot. No need to keep the icing warm, but you can keep a small tea light or very low flame underneath the pot for some ambience! Display sprinkles and toppings in small bowls/cups and arrange around the pot.  
4.  Skewer your cupcakes through the side and dip the cupcake dome into the fondue, flip the cupcake over and sprinkle with your favorite toppings.  Stir the icing from time to time to keep it smooth.
